With this Thai dish, one could conceivably convert even a voracious carnivore to vegetarianism! Chewy, wide rice noodles stir-fried in a sauce of soy, brown sugar, and garlic are studded with pan-charred broccoli florets, scrambled eggs, and browned tofu that are firm yet tender and in sizeable chunks that one can really sink teeth into! You’ll never miss the meat! (Eggs may be omitted for a vegan meal.)
