One would be hard-pressed to find a vegetarian dish more simultaneously elegant and hearty than this. Tomatoes, yellow squash, zucchini, eggplant, and onions are stewed with sliced hot peppers and served over herbed polenta wedges pan-crisped to a golden crust.
