Rustic Split Pea Porridge
Flavored by root vegetables and country ham sautéed in garlic, split pea and pearl barley are slowl-simmered to a pulp in broth until reduced and thickened. This heart-healthy soup is surprisingly satisfying, especially served with a topping of with garlic and black pepper croutons that provide crunch and additional carbohydrates. It is accompanied by salad greens with French vinaigrette when chosen as an entree.

Tofu & Broccoli Pad See-Ew
With this Thai dish, one could conceivably convert even a voracious carnivore to vegetarianism! Chewy, wide rice noodles stir-fried in a sauce of soy, brown sugar, and garlic are studded with pan-charred broccoli florets, scrambled eggs, and browned tofu that are firm yet tender and in sizeable chunks that one can really sink teeth into! You’ll never miss the meat! (Eggs may be omitted for a vegan meal.)
